Peanut Butter Cookie Dough Balls

Peanut Butter Cookie Dough

Peanut Butter Cookie DoughThese deliciously, cookie dough like balls, are another great 3pm snack for when you’re getting those sugar cravings (why you’re getting these cravings is a whole other topic, which I’ll be writing about soon!).

Why’re they so good?

  • They’re packed with oats, which help to calm the nervous system
  • Dark chocolate; great source of magnesium which again assists the nervous system
  • Contain almonds which are an awesome source of calcium, healthy fats, fibre, protein, magnesium and vitamin E
  • And finally; lots of healthy fats including coconut oil, peanut butter and almonds. These healthy fats, will create a sustained energy release, avoiding fluctuations in energy levels – yay!
  • Note: If you experience acne, substitute the peanut butter for another note, as peanuts can exacerbate breakouts

What you’ll need:

  • 1.5 cups rolled oats
  • 2 tablespoons coconut oil
  • 2.5 tablespoons of peanut butter (100% blended nuts) or you can use almond, or a nut butter of choice
  • 2 tablespoons of mini dark chocolate chips, or chopped up dark chocolate (try to find the cleanest dark choc)
  • 4 tablespoons of rice malt syrup or sweetener of choice
  • ½ cup of almond meal (you can simply blend almonds if you have a high speed blender)
  • Pinch of sea salt
  • 1 teaspoon vanilla essence

Method

  1. In a blender – blend the oats until a fine flour forms (You can use oat flower if that’s easier). Set aside for use later.
  2. In a large bowl – combine coconut oil, peanut butter, rice malt syrup and vanilla essence. Mix together by hand, or in a mixer, until combined.
  3. Add the dry ingredients; oat flour, almond meal and salt. Mix together until combined and stir in chocolate chips.
  4. Roll into small, snack size balls.
  5. I like to keep mine in the freezer; that way they keep for longer and are super yum!
