Banana Berry Muffins
This is one of my absolute favourite muffin recipes. They’re so simple to make, and the whole family will love them. The secret to these muffins is using super ripe bananas – the riper, the sweeter they’ll be.
Why they’re so good?
- Although these muffins are sweet – they’re refined sugar free, so a big tick!
- The cinnamon assists with regulating your blood sugar levels, reducing mood changes, energy fluctuations, headaches and anxiety
- The eggs are an excellent protein source to assist with energy levels
- The blueberries add some excellent antioxidants, important for pretty much every function in your body!
- And the oats are a great for calming the nervous system, say goodbye to stress and anxiety!
What you’ll need:
1 3/4 cup of spelt flour
1/3 cup of oats
3 x ripe bananas (the riper, the yummier)
2 x egg or egg replacement
1/4 cup of almond or coconut milk
1 teaspoon baking soda
1 teaspoon of vanilla extract
½ cup of melted coconut oil or olive oil
½ cup of sweetener of your choice – honey or maple syrup
¼ cup berries
½ teaspoon salt
¼ teaspoon of cinnamon
Method:
- Preheat the oven to 165 C, fan forced. Prepare your muffin tray.
- In a large bowl, whisk together the oil and sweetener of choice. Add the eggs and beat well. Mix in the mashed banana and milk, then add the baking soda, vanilla extract, salt, cinnamon and berries.
- In another bowl, mix together flour and oats, then add to the wet mix. Mix until just combined (Over stirring will cause the muffins to be tough).
- Place mixture into previously prepared muffin tray and bake for 25 minutes.
